I see hauler ships doing this a lot, and my biggest question is how much money could you possibly make doing this?

Um, pretty sure you can only fit 1 Miner II on it. Also drop the T2 rigs and fill the mid slots with Medium Shield Extenders. -

Obvious troll. You can only fit 1 miner on an indy.
Edit: Also, it's a flawed concept. Even if you had one huge rich plagioclase roid to suck on. When you come back in a few hours, 1 cargohold of plagio is not worth that much. It's what, 40k (assuming T1 rigs) in 7 hours. With max skills. I could get 40k ore in my medium skilled Covetor is 40 minutes. The ISK/hour, even for being completely afk, on this is atrocious. -
